Radicals and quasi-radicals containing oxygen. Basic lipid chemistry - role of lipids, their classification and sensitivity toward hydrogen atom abstraction processes. Structure of cell membranes and oxidative damage of lipids/phospholipid bilayers. Kinetics of autoxidation - rates of mono and polyunsaturated fatty acid oxidation. Photooxidation and enzymatic autoxidation. Preventive antioxidants - enzymes, complexing agents, singlet oxygen quenchers. Chain-breaking antioxidants and retarders. Ascorbic acid, carotenoids, tocopherols, flavonoids. Synergism in antioxidant action. Tocopherol mediated peroxidation
