Autoxidation and Antioxidants 1200-2MON45L
Principles of free radical processes. Formation and detection of free radicals, their stability and reactivity. Kinetics of radical mediated processes. Chain reactions. Radicals and quasi-radicals containing oxygen.
Basic lipid chemistry – role of lipids, their classification and sensitivity toward hydrogen atom abstraction processes. Structure of cell membranes and oxidative damage of lipids / phospholipid bilayers.
Kinetics of autoxidation – rates of mono and polyunsaturated fatty acid oxidation. Photooxidation and enzymatic autoxidation.
Preventive antioxidants – enzymes, complexing agents, singlet oxygen quenchers. Chain-breaking antioxidants and retarders. Ascorbic acid, carotenoids, tocopherols, flavonoids. Synergism in antioxidant action. Tocopherol mediated peroxidation.
